Here’s how to prepare this lobster bisque.
Thaw
Our 18-ounce and 1/2 gallon containers are shipped frozen and should be kept in the refrigerator to thaw. Our 18-ounce containers should thaw overnight, while the 1/2 gallon may take a day or more.
If you kept your bisque in the freezer but want to enjoy it the same day, no worries. Place it sealed in a deep bowl of cool water. The small container can thaw in about an hour, while the half-gallon will need more time.
Once your soup is thawed, gentle heating is best to keep the cream from curdling and the lobster meat tender.
Since our gallon-size bag is shipped fresh, you can skip the thawing and jump right to heating it up!
Heat on the Stovetop
Pour the bisque into a large pot over low to medium-low heat. Stir often until it reaches a consistent temperature of 165° Fahrenheit. This method offers the best results if you’re heating a half-gallon or gallon for a large crowd.
For even gentler heating, use a double boiler. You’ll need a large pot and a heat-proof bowl that can sit on top of the pot. Fill the pot with 2 inches of water and top it with the bowl — the bottom of the bowl shouldn’t be touching the water. Pour your bisque into the bowl, bring the water to a simmer over medium heat and stir the soup until it reaches 165° Fahrenheit, which takes around 20 minutes. Keep an eye on the water level in the pot and add warm water if it gets too low.
Heat in the Microwave
If your mouth is watering just thinking about this lobster bisque and you want it ASAP, you can heat it in the microwave. Pour a single serving into a microwave-safe bowl, cover with a paper towel and heat it at 30-second intervals. Stir between each 30-second burst, and keep heating until it reaches 165° Fahrenheit.
No food thermometer? You could heat your soup until it begins to boil so you know it’s reached a high enough temperature, but remember this could impact the texture.
